Tamales con Huevos

 Here’s how to do it

Ingredients:

  • Egg
  • Delia’s Tamales
  • Tortilla 
  • Parmesan cheese
  • Salt
  • Pepper

Steps to Make It:

  • Remove husk and cut up a tamale into bite-sized pieces
  • Grease up Skillet
  • Season tamales with salt and pepper and cook in the skillet
  • Cook egg in Skillet away or with tamales
  • Season Egg
  • Heat up the tortilla
  • Once the egg and tamale are cooked thoroughly, place egg and tamales in the tortilla
  • Take a handful of parmesan cheese and sprinkle it over

Bacon Wrapped Tamales

The fastest way to enjoy some Delia’s in the morning is by wrapping it up in some bacon!

Ingredients: 

  • Delia’s Tamales
  • Bacon Strips
  • Dipping Salsa

Steps to Make It: 

  • Preheat oven to 400 degrees
  • Remove tamale husks and cut tamale into bite-sized pieces
  • Wrap tamale pieces with bacon 
  • Secure them with a toothpick
  • Place in the oven for 10-15 minutes until the bacon is brown and crispy
  • Dip in our salsa verde or salsa rojo and enjoy

Tamale Breakfast Pie

Pie is not only for dessert, but for breakfast too. This savory breakfast pie is guaranteed to be a fan favorite at home.

Ingredients:

  • 24 Delia’s Pork or Spicy Pork Tamales
  • 6 beaten eggs
  • 1 ¼ cups of whole milk
  • 4 OZ diced green chiles
  • 2 cups of shredded cheddar cheese

Steps to Make It:

  • Preheat the oven to 375ºF and spray a 9-inch round cake pan with non-stick cooking spray
  • Stand the halved tamales up in the pan and set them aside
  • In a medium bowl, combine eggs, milk, green chiles, and cheese. Season generously with salt and pepper. 
  • Pour mixture over the tamales, cover with foil and bake for 35 minutes. 
  • Remove foil and continue to bake until cheese is browned and the center is set. 
  • Let cool for 15 minutes, then run a knife around the edges to loosen. Place the plate on top of the baking dish and invert the pan. Let the release of the egg from the pan, remove the pan from the top and place a second plate over the top and flip it over again. 
  • Cut, serve, and ready to enjoy!

Tamale Frittata 

This is just a fancy way of saying, delicious and nutritious. 

Ingredients:

  • 2 teaspoons vegetable oil 3 to 4 (about 10 ounces total)
  • Prepared savory beef or chicken tamales, cut into bite-size pieces 
  • 5 large eggs 
  • 2/3 cup (5 fluid-ounce can) Evaporated Milk 
  • 1 1/2 cups (6 ounces) shredded mozzarella cheese 
  • Green tomatillo salsa, warmed

How To Make It

  • Heat oil in a large skillet over medium heat
  • Add tamale pieces; cook, stirring occasionally, for about 5 minutes or until golden brown. 
  • Beat eggs and evaporated milk in a large bowl until blended. Add to skillet; cover
  • Cook over medium-low heat for 6 to 8 minutes or until the center is set
  • Top with cheese; cover. 
  • Remove from heat. Let stand for 2 minutes or until cheese is melted. 
  • Serve topped with salsa

Breakfast Tamale Casserole 

This just like the tamale can be enjoyed breakfast, lunch, or dinner. This flexible dish is easy to make and fun to bake. 

Ingredients:

  • 6 eggs
  • 1 cup of whole milk
  • 2 Cups of Mexican-style shredded cheese mild cheddar and Monterrey jack mix
  • 4 Oz of diced green chiles
  • El Yucateco Green Habanero Hot Sauce
  • Salt and Pepper
  • 5-6 Delia’s Tamales

 How to Make It

  • Preheat the oven to 375 degrees F
  • Spray the bottom of a medium casserole or gratin dish with a little olive oil and set aside
  • In a medium size mixing bowl add eggs, whole milk, 1 cup of shredded cheese, diced green chiles, a few dashes of hot sauce and a pinch of salt and pepper.
  • Mix together until well combined. Set aside. 
  • Cut tamales into quarters and then place in an even layer on the bottom of the prepared casserole dish
  • Pour egg mixture over the top of the tamales and then sprinkle on the remaining cup of shredded cheese
  • Cover the top of the dish with foil then bake at 375 degrees F for 35 minutes
  • Remove the foil and bake uncovered for an additional 15-20 minutes until golden brown and the middle is no longer wobbly
  • Remove from the oven and allow to cool for 15 minutes before serving
