How Was Menudo Created?
Several places claim Menudo came from farmers accidentally creating it by using leftover parts of the cow, but nothing has ever been confirmed. There are also claims that it didnโt come from Mexico. Itโs older than dishes similar to it, and theirs more accounts for this soup being around at the time of its creation, so it is likely Menudo derived from central Mexico. The Philippines has a comparable soup with the same name but different ingredients, such as pork, sliced liver, carrots, and potatoes.
